Watermelon Ricotta Salad

3 tbsp. fresh basil, sliced
2 tbsp. fresh lime juice
2 tbsp. olive oil
1 4 lb. seedless watermelon, cut into small cubes
1/2 lb. ricotta salata, cut into small cubes
1/4 cup toasted pine nuts

Whisk first 3 ingredients in small bowl and season with salt and pepper.  Place watermelon
and ricotta salata in medium serving bowl. Drizzle with dressing.  Toss and sprinkle with
pine nuts.
