Trader Vic's Cheese Balls
Makes about 30
1/2 pound cheddar cheese, shredded
6 oz. uncooked shrimp, peeled, deveined and finely chopped
1 1/2 tbsp. cilantro, chopped
1 tbsp. canned jalapenos, seeded, chopped
Pinch of chili powder
Vegetable oil for deep frying
1 cup flour
1/2 cup cornstarch
3/4 tsp. baking powder
pinch of salt
1 cup water
2 tbsp. vegetable oil
1 cup Panko (Japanese Breadcrumbs)
Mix cheese, shrimp, cilantro,
chilies and chili powder in a bowl. Roll into 3/4 inch balls.
Heat oil in a deep fryer to 350. Combine flour, cornstarch, baking powder
and salt in a large bowl.
Make a well in the center. Add water and 2 tbsp.
oil to well. Gradually whisk liquid into flour until a
smooth batter
forms. Dip cheese balls into batter, allowing excess to drip back into
bowl.
Roll in panko, coating completely. Add to oil in batches and fry until
golden brown. Drain on
paper towels and serve immediately.
