TEXAS CAVIAR
2 cups fresh tomatoes, chopped
1 (15-oz) can black-eyed peas, drained
1 sweet onion, chopped
1 clove garlic, minced
1/2 cup olive oil
1/3 cup red wine vinegar
1/2 cup fresh cilantro, chopped
salt and pepper to taste
Combine all ingredients in a large
bowl and chill for several hours before
serving with tortilla chips.
