Salsa Black Bean Chowder

1 can (15.5 oz) black beans
1 jar medium salsa/ I use Tostitos
1 can cream corn
2 cups chicken /or vegetable stock
1 onion ­chopped
2 tbsp. butter
1 clove garlic/minced in oil okay
1 lb Monterey jack/peppers chopped
2 cups 1/2 & 1/2 dairy creamer

Melt butter in pan.
Sauté onion & garlic.
Add beans to heat up and flavor.
Add salsa and corn. Mix gently
Add chicken stock.
Heat.
Stir in cheese. Stir to mix.
Add creamer.
Heat. Can stay on low for a while.
This is a fast recipe to cook up. It uses medium heat. To reduce heat
use Jack cheese plain &/or get mild salsa. Chowder has
a nice pink color. Great with corn bread.
