PIZZA-STUFFED TOMATO SALAD CUPS


4 large tomatoes
1 c. pre-cooked instant rice
1/2 c. water
1(4oz.)can tomato sauce
1/2 c. grated parmesan cheese
1/2 c. chopped pepperoni
1/4 c. chopped onions
1/4 c. chopped black olives
1/4 c. chopped green bell pepper
Creamy Italian dressing
1 tsp. salt

Cook rice according to package directions using the water and tomato
sauce.
When done, stir in parmesan cheese; set aside to cool.
Slice tops from tomatoes; scrape out and finely chop centers and tops.
To cooled rice mixture, add the chopped tomatoes and remaining
vegetables.
Stir in salt and Italian dressing to taste.
Spoon into tomato cups; chill and serve
