Piquant Lima Beans (Picante de Pallares)
3 - 4 cups large dried lima beans
2 tbsp. Aha Hot Pepper Paste
1 tbsp. Aha Spicy Pepper Paste*
6 oz. fresh cheese (such as Feta)
1 red onion, chopped well
1 quart chicken broth
1/3 cup evaporated milk
1 egg, beaten
5 cloves garlic, peeled and crushed
3 tbsp. olive oil
Cover the beans with 4 inches of water and soak overnight. Drain beans,
add chicken broth and simmer until tender but firm. Do not overcook.
Brown onions and garlic in oil, then add Aha paste. Drain beans (save
chicken broth for soup base) and add them to onion mixture. Add evaporated
milk.
Crumble cheese and add. Swirl in the egg. Add salt and pepper to taste.
Serve with rice.
*The Peruvian Pepper Paste by Aha!
can be purchased at Amazon, it is very
difficult to find in stores. In fact, as of this writing, it cannot be
purchased at
Amazon-will keep my eye out for another source. Pepper Pastes are similar
to chili paste, so unless you have an aha! source you can substitute with your
favorite chili paste.
