Persimmon Cookies
2 cups sugar
1 cup butter
4 cups flour
2 eggs
1/2 tsp. cloves
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
2 cups persimmon pulp
2 cups raisins
2 cups walnuts
2 tsp. baking soda dissolved in pulp
Cream butter and sugar. Mix flour and spices thoroughly. Add raisins
and nuts to flour mixture.
Beat egg and add to pulp. Combine all ingredients and mix well. Drop
by tablespoonfuls on greased cookie sheets. Bake at 350 degrees for
12 to 15 minutes. Cool on wire racks.
