I just love pasta with tuna and it
is so easy to keep all the ingredients on hand.
Penne with Tuna, Olives and Capers
1 lb. Penne
1 cup breadcrumbs
2 tbsp. parmesan cheese, grated
1/4 cup + 2 tbsp.
olive oil
1 clove of garlic, sliced
2 6 oz. cans of tuna
3 green onions, sliced
1/3 cup black olives, chopped
1 tbsp. capers
1 tbsp. lemon juice
1 tsp. dried oregano
1/2 tsp. crushed red pepper
Salt and Pepper to taste
Chopped flat leaf parsley for garnish
Preheat the oven to 350.
Cook the Penne in a large pot of salted water, stirring occasionally, until
done to your taste. Drain, reserving 1/2 cup of the water and return pasta
to the pot.
In a small bowl, toss the bread crumbs with the parmesan cheese and 2 tbsp. of
olive oil. In a
large skillet heat the remaining 1/4 cup of olive oil. Add the garlic and
cook over medium heat
until golden, about 4 minutes. Stir in the tuna and green onions and
remove from heat. Add the
olives, capers, lemon juice, oregano, and red pepper. Season to taste with
salt and pepper.
Toss the Penne with the tuna sauce adding a few tbsp. of the cooking water to
moisten the
pasta. Transfer to a baking dish and sprinkle with the bread crumbs.
Bake for about 10 minutes.
Sprinkle with parsley and serve.
