Peanut Butter Oatmeal Chips
1/2 C. butter
1 1/2 C. granulated sugar
1 1/2 C. brown sugar
4 eggs
1 tsp. vanilla
1 jar (18 oz) peanut butter (chunky or smooth)
6 C. quick oats
1 pkg. (6) oz. semi-sweet chocolate chips
2 1/2 tsp. baking soda
Heat oven to 350 degrees. In a large bowl beat together butter and
sugars. Blend in eggs and vanilla. Add peanut butter, oats and baking soda. Mix
well. Stir in chocolate chips. Drop by scant 1/4 c. dry measure approximately 4
inches apart on ungreased cookie sheet. Flatten with fork to 2 1/2 inches in
diameter. Bake 10-12 minutes. Do not over bake.
Cool 1 minute and then remove to wire cooling rack.
