Low Country Squash

2 medium zucchini - sliced 1/4" thick
2 medium yellow squash - sliced 1/4" thick
1 sweet bell pepper - in 1" pieces
1 medium onion - diced
4 medium to large fresh tomatoes or 2 cans stewed tomatoes
1/4 tsp. dried rosemary
1 tsp. salt ( or to taste)
black pepper - to taste
2 chicken bouillon cubes ( the REAL McCoy is seasoned with diced bacon
or the
fat from fried bacon)
Put everything in a medium saucepan and cook on medium heat, covered,
for 8 - 10 minutes.
A good side dish and gives the squash a new twist!
