Fresh Garden Casserole
1 cup sliced onions
1 pound ground beef
1 green pepper, chopped
1 cup chopped celery
1 cup diced carrots
4 large tomatoes, quartered
3/4 tea. salt
1/8 tea. pepper
1 tablespoon brown sugar
3 cups mashed potatoes
2 tablespoons melted margarine (or
butter)
parsley sprigs
Lightly brown onion & beef, add green pepper, celery,
carrots, tomatoes, seasoning & sugar. Simmer 20
minutes or until
tender. Pour into 2 qt. casserole & top with mounds of mashed
potatoes. Brush lightly with margarine and bake in 350 oven
until topping is golden brown. Garnish with parsley.
Makes 6 large servings.
