Egg Fiesta
12 eggs
1/4 cup water
salt & pepper to taste
3 tbsp. butter
3 more tbsp. butter
1/2 to 1 cup mushrooms
1/2 green onion
1/2 cup each red and green pepper
1/2 cup zucchini
1/2 cup tomatoes
1/4 green chilies
1/2 lb. Monterey jack cheese- grated
salsa
beat eggs and water together. Season with salt and pepper. Melt butter in frying pan and
add egg mixture. Scramble until just moist. Place in large ovenproof casserole dish and
keep warm in oven. Melt the other butter in frying pan and sauté all veggies until
tender. Spoon over eggs, sprinkle with cheese and return to 300 degree oven until cheese
melts. Serve with lots of salsa.
