EASY BACON AND CHEESE QUICHE
4 large eggs
2 cups milk
1/4 cup chopped onion
1/3 cup melted butter
1/2 cup biscuit mix
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 lb. bacon, cooked and crumbled
1/2 cup grated cheddar cheese
Place all ingredients, except bacon and cheese, in a blender. Blend
about 3 minutes. Pour into a well-buttered 9-inch pie pan. Sprinkle
bacon and cheese on top of mixture. Bake in a preheated 35o degree
oven for 45 minutes. You may need to cover with foil the last 15 minutes
to prevent overcooking the top. Let cool slightly. and cut into 4
servings.
This easy to prepare quiche makes it's own crust and really enjoyed
for Sunday brunch. Bake two if you are having company.
