Brown Sugar Apple Cake
3 eggs, well beaten
2 cups diced apples
3 cups flour
1 cup salad oil
1 cup sugar
1 cup packed dark brown sugar
2 tsp vanilla
1 tsp baking soda
1 tsp salt
1 cup nuts (optional)
cinnamon & sugar mixture
Sift dry ingredients together.
In a separate large bowl, pour beaten eggs over apples. Stir in oil.
Beat in remaining ingredients, saving nuts for the last.
Pour into a 13x9 inch pan and sprinkle top of batter with cinnamon
and sugar mixture and bake at 350 degrees for 40 to 45 minutes.
