Blackberry Soup
This one is a great
way to use up extra berries. It's very nice for a light lunch.
Another good way to use your berries is to put them in the blender with powdered
sugar and lemon
juice to taste. Then strain out the seeds. This is great on ice
cream or pound cake.
1 16 oz. can of
blackberries (or 2 baskets fresh) add 1/2 cup more water if using fresh
1 cup water
1 8 oz can lemon yogurt
1/2 cup grape juice
1/8 tsp. ground cinnamon
1 small banana, sliced
2 tbsp. toasted coconut
Place undrained
berries in a blender or food processor. Blend until smooth.
Drain
and strain out the seeds. Return liquid to the blender or food processor.
Add
water, yogurt, grape juice, and cinnamon. Cover and blend until just smooth.
Cover and chill.
Garnish with banana slices
and toasted coconut. Makes 6-8 servings.
