Apple Raisin Soup
2 cups apple juice
2 large cooking apples, peeled and cubed
1/4 cup raisins
2 inch long piece of cinnamon stick
1 tbsp. brown sugar
1 tbsp. brandy (optional)
in a 2 quart saucepan
combine the first 4 ingredients. Cover and simmer 15 minutes or
until the apples are tender. Stir in brandy and sugar cook till dissolved.
Remove cinnamon
stick before serving. You can also put this in the blender before serving
if desired.
Makes 3 or 4 servings.
This is nice at
breakfast time.
