Black bean chili
Dump into a crockpot:
*1-2 quarts (3-4 14oz cans, total) of black beans plus any
combination of pintos or reds or any other medium-dark bean. A few
garbanzos would work, too.
*One big or two little onions, chopped
*A couple of cloves of garlic, sautéed with the onion in
*A couple of tablespoons of vegetable or olive oil
*A cup or so of uncooked barley (pearled barley is to barley as
white rice is to brown rice; you could substitute brown rice or
probably even non-instant oatmeal)
*A large can of stewed tomatoes (don't drain), diced if you like
*2-3 cups of frozen corn depending on the size of your crock pot
*2-3 tablespoons of dark chili powder blend (should contain things
like oregano and cumin; look for it at Costco)
*1 tsp ground cumin
*1 tsp cumin seed
*a little extra water if it looks like you need it--barley is
thirsty stuff.
salt and pepper to taste
Stew several hours on high until warmed through and blended. All
day is fine if you will be out.
