MOLDED AVOCADO AND CUCUMBER SALAD
1 (2.75 oz) package lemon Jell-O
1/2 cup hot water
1 small English cucumber, shredded and drained well in a colander*
½ cup mayonnaise
¾ cup white vinegar
½ cup cream cheese, softened
1 small avocado, peeled and mashed
salt and pepper to taste
In a medium mixing bowl, mix the Jell-O with boiling water and stir
until
dissolved. Put in the freezer until thickened slightly (until it
resembles thick raw egg white), about 15-20 minutes. Add cucumber, mayonnaise,
vinegar, cream cheese and avocado to Jell-O. Season with salt and
pepper and turn into a large rinsed mould or small individual moulds. Cover with
plastic wrap and chill in refrigerator until firm. Unmold just before
serving and decorate with cucumber slices and fresh chopped lettuce
leaves.
(Serves 6)
· It is not necessary to peel the English cucumber
Hint:
· Unmold the salad onto a wet plate. If the mould lands in the
wrong spot
all you have to do is tilt the serving plate to position it correctly.
