Chicken Wild Rice Soup
6 cups water
1 pkg. (4.3 oz.) long grain and wild rice mix
1 env. dry chicken noodle soup
1/2 cup chopped celery
1/2 cup chopped carrots
1/3 cup chopped onions
2 cans cream of chicken soup, undiluted
2 cups cubed cooked chicken
In a large saucepan, combine water, rice, contents of seasoning packet,
and the soup mix. Bring to a boil. Reduce heat. Cover and simmer 10
minutes.
Stir in carrots, celery, and onions. Cover and simmer for 10 minutes.
Stir in chicken and chicken soup. Cook 8 minutes longer, or until
vegetables and rice are tender.
Makes 4-6 servings.
