Warm Tomato Salsa
2 T Butter
1 Large Onion, finely chopped
1 green bell pepper, seeded and chopped
4 Large tomatoes, peeled, seeded, and cut into chunks
In a saucepan melt the butter over med-high heat. Add the onion and the bell pepper. Cook,
stirring, until
the vegetables are soft (about 10 minutes). Add the tomatoes until they are heated through
(about 2 more
minutes). Season to taste with salt and pepper.
