TEX-MEX GROUND TURKEY STUFFED TOMATOES
6 or 7 large tomatoes
1 lb. ground turkey
1 c. precooked rice
1 medium onion, chopped
1 clove garlic, minced
1 pkg. taco seasoning mix
3/4 tsp. chili powder
1/2 c. sour cream
1 4-oz. can tomato sauce
3/4 cup water
3/4 cup shredded Monterey jack cheese
lettuce leaves
1 pkg. tortilla chips
Slice tops from tomatoes. Scoop out centers and dice inside portions.
Turn shells upside down to drain. Brown meat with onion and garlic; add
taco seasoning, salt, chili powder, rice, sour cream, water, tomato sauce
and the chopped tomatoes. Bring to a boil; reduce heat and simmer 15 minutes
or until liquid is mostly absorbed. Fill tomatoes with meat mixture and
bake for 20 minutes at 350 degrees. Top with grated cheese; bake an
additional 5 minutes. Serve on lettuce leaves with tortilla chips.
