Sweet Potato Sausage Casserole
2 cups mashed sweet potatoes
1 tablespoon brown sugar
2 tablespoons margarine
1/2 tsp. salt
1 lb. link sausage
3 tablespoons raisins
2 tablespoons water
1/4 cup orange juice
combine mashed sweet potatoes, sugar, margarine, salt.
Place sausage links in skillet with water,
cover & simmer for 5-8 minutes till cooked..
drain, then cook slowly, turning often until well
browned.
place mashed sweet potatoes in 1-1/2 qt. casserole.
Arrange sausages on top. Pour orange juice over top.
Bake at 350 for 30 minutes. Makes 4 servings.
