Sweet Potato Biscuits
4 cups all purpose flour
1/4 cup baking powder
1 Tsp. salt
4 Tsp. sugar
8 oz.
butter, cut into small pieces and chilled
1 cup buttermilk
6 oz baked, pureed, sweet potato (1 large sweet potato)
In a large mixing bowl, combine
the flour, baking powder, salt and sugar. Cut in the butter
using your fingers or a pastry blender until crumbly. Combine the
buttermilk and the pureed
sweet potato and stir into the flour mixture. Turn the dough out onto a
floured surface, knead
lightly, then roll out to 1/2" thickness with a rolling pin. Cut with a
round cookie cutter(2 inch)
and place on baking sheets. Bake in a preheated 400 degree oven until
golden brown,
about 15 minutes.
