Spaghetta is betta
Dear Contest people:
Here's the spaghetti recipe that works. We say spaghetti, because, hey, this
is Miami. It's low salt/no salt; and that gives a sweet taste. Too much
salt is killing us. So sprinkle on the parmesan cheese and it will taste
salty, be salty, and you can pretend it's salt free.
The Sauce
One small onion, chopped
three cloves garlic, chopped,
half a sweet red pepper, chopped
Three tablespoons olive oil
Dash of oregano (quarter teaspoon)
Tablespoon parsley,
quarter teaspoon cayenne pepper.
Three 8 oz cans salt-free tomato sauce
one 15 or 16 oz can salt free chopped or diced tomatoes
three fresh, ripe tomatoes, chopped fine in the blender.
Gently fry the onion in the olive oil until yellow, add sweet red peppers and
cook gently three minutes, add chopped garlic and cook another minute.
Dump in all seasoning, then add all tomato sauce. Stir together and simmer
for 45 minutes.
Cook thin spaghetti al dente, drain and pile on the plates. Pass the sauce
and the Parmesan.
It's good with garlic bread and a big green salad.
