SLICED TOMATO PEPPER SALAD
2 large tomatoes-cored and cut into 1/4" slices
2 medium green bell peppers-cut into 1/4" rings
2 medium red onions-cut into 1/4" slices
lettuce leaves to cover bottom of platter
1/2 tsp. each salt and pepper
1/2 c. light olive oil
1/4 c. fresh parsley,finely chopped
1/4 c. almonds, finely chopped
1 c. grated fresh parmesan cheese
Place lettuce leaves on bottom of large platter; top with tomatoes,
bell
peppers, and onions; salt & pepper to taste.
Drizzle olive oil over vegetables; Sprinkle with parsley and almonds;
Cover
with cheese.
