Sicilian Broccoli Salad
3 cups broccoli florets
1 cup fresh mozzarella balls*
1 cup grape or cherry tomatoes, halved and seeded
3 tablespoons fresh Italian parsley, minced
1/3 cup white balsamic vinegar
1/3 cup olive oil
1/2 cup orange juice
1 teaspoon minced garlic
1 teaspoon salt
1/2 teaspoon cracked pepper
1/2 cup chopped walnuts
3 tablespoons fresh basil, minced
1 tablespoon fresh thyme
2 tablespoons grated parmesan
Place broccoli florets in a microwave-safe bowl, and process on high for 4
minutes, stirring once during processing time. Let broccoli cool to lukewarm
temperature.
Toss broccoli with the mozzarella and tomatoes. Place in a serving bowl.
Place remaining ingredients in a blender or food processor, and pulse until
blended. (Walnuts may still be chunky.) Pour over the broccoli mixture, and toss
until coated. Serve immediately, or cover and refrigerate. Remove from
refrigerator 15 minutes prior to serving for best flavor.
*Mozzarella balls can be hard to
