Pumpkin Brownies
Non-stick cooking spray
2 1/2 cups all-purpose flour
1 (15 ounce) can pumpkin
1 1/2 cups granulated sugar
1/2 cup applesauce
Egg substitute or egg white to equal 2 whole eggs
1/4 cup fat free milk
2 teaspoons baking powder
2 teaspoons pumpkin pie spice
1 teaspoon salt
1/2 to 1 cup raisins
1 cup semisweet chocolate chips or white chocolate chips
1 cup powdered sugar
2 tablespoons fat-free milk
Heat oven to 375 degrees F. Lightly coat 15 1/2 x 10 1/2 -inch
baking pan with cooking spray.
In large bowl, combine flour, pumpkin, sugar, applesauce, eggs,
milk, baking powder, pumpkin pie spice, and salt; mix until just blended.
Stir in raisins and chocolate chips, if desired. Spread evenly into prepared
pan.
Bake 20 to 25 minutes or until wooden pick inserted in center comes
out clean. Cool completely in pan on wire rack.
In small bowl, combine powdered sugar and 2 tablespoons of the milk;
mix until smooth, adding additional fat-free milk, as needed, to reach
desired consistency.
Drizzle over brownies; cut into squares.
