Pineapple Chicken
1 1/3 cup pineapple juice
1/3 cup teriyaki sauce
salt and pepper to taste
2 lbs. boneless, skinless chicken breast, cubed
Cooking spray (Pam or your favorite)
Combine the first 4 ingredients in a large zip top plastic bag. Add the
chicken breast.
Seal the bag and
marinate in the refrigerator 2 hours up
to overnight. Prepare the
barbecue grill. You can also broil these
if you like. Take chicken out of the bag,
reserving 1/2 cup marinade.
Bring reserved marinade to boil in
a small saucepan over
medium high heat, boil
one minute.
Thread chicken onto 12 skewers. Put skewers on a grill rack coated with
cooking
spray. Grill 12 minutes
or until done. Turning and basting with
reserved marinade.
