Pear Salsa Salmon
1 small ripe pair
1/2 red bell pepper
1 small jalapeno, seeded and chopped
1 tsp. ground cumin
1 tbsp. lime juice
2 tbsp. chopped cilantro
Salt and pepper to taste
Olive Oil
4 salmon fillets
Core pear and cut into 1/2 inch
pieces over a bowl to save the juice. Add pieces to bowl
with the juice. Seed bell pepper and cut into 1/2 inch pieces and add to
the bowl. Add
jalapeno, cumin, lime juice, cilantro and salt and pepper. Heat a
non-stick skillet on med-
high and add a small amount of olive oil. Sauté the salmon fillets for
about 4 minutes per
side. Season with salt and pepper. Serve the fillets with the salsa
on top.
