Peanut Pumpkin Soup
4 Tbsp. (1/2 stick) unsalted butter
4 cups canned pumpkin (or leftover cooked & pureed pumpkin)
2 cups cooked pureed Sweet potato
1 cup SMOOTH peanut butter
6 cups Chicken stock
1 tsp ground black pepper
1 tsp salt
snipped fresh chives, for garnish
Sour cream, for garnish
DIRECTIONS:
1. Melt butter in a soup pot over medium heat. Stir in the pumpkin, sweet potato
& peanut butter.
2. Add the stock, pepper & salt and stir well until smooth. Reduce the heat to
simmer and
cook for 20 minutes.
3. Before serving, garnish the soup with Chives & sour cream.
