Peach Muffins
1 egg, beaten
1/4 cup butter, melted
2/3 cup sugar
1/2 teaspoon salt
1/4 teaspoon cinnamon
1 cup milk
1 teaspoon lemon juice
1/4 teaspoon vanilla
2 cups flour
1 tablespoon baking powder
1 cup peeled peaches, diced
Stir together first 8 ingredients. In a separate bowl, mix together
flour and baking powder. Add to milk mixture and stir just until
blended. Fold in peaches. Grease muffin tins and fill 2/3 full. Bake
at 400 degrees F for 18 to 20 minutes.
