Pastel Cookies
3/4 cup shortening
1/2 cup sugar
1 package (3oz) fruit flavored Jell-O
2 eggs
1 teaspoon vanilla
2-1/2 cups all purpose flour
1/2 teaspoon salt
1 1/2 teaspoon baking powder
Heat oven to 400 degrees. Mix shortening, sugar, gelatin (Jell-O), eggs
and vanilla in bowl. Stir in remaining ingredients. Shape dough into
3/4" balls (or you can shape for what design you want). Place on
ungreased cookie sheet. Flatten with bottom of glass that has been
dipped in sugar. Bake 6-8 minutes Makes about 5 dozen. A great topper
to these is dipping them in powdered sugar after they have baked.
