This is something I like to make for Breakfast on the weekend. This usually serves 4
people.
You can add more or less of the veggies or meat to taste. It is a big hit in our house!

Pam's Eggcellent Breakfast
5 or 6 eggs
3/4 bag of frozen hashbrown potatoes (you can also use 3-4 regular potatoes instead of the
frozen
hashbrowns, just peel and boil them until almost cooked, then cut them up.)
1/2 - 1 whole green pepper, diced
1/2 - 1 whole tomato,diced
1/2 - 1 onion, diced
Ham or turkey lunchmeat, diced
lawry's seasoning, pepper
Butter or margarine
grated Cheese - optional
Cook potatoes,pepper and onion in butter until potatoes are no longer frozen and are
slightly brown. While
this is cooking, Beat eggs in a separate bowl. When potatoes are slightly brown, poor the
beaten eggs
and the diced lunchmeat into the pan with the potatoes,pepper & onion. Stir
occasionally while the eggs
cook. You want to scramble them with the potatoes,meat and veggies. Season with Lawrys and
pepper
and let cook until eggs are done. If you want to add Cheese, do so after adding the eggs.
Season again
with lawry's (or salt) and pepper to taste. Serve with Toast and Orange
