ORANGE CHOCOLATE TRIFLE
1 8-oz. pkg. orange flavor gelatin
1/4 cup orange juice
1/2 gallon chocolate ice cream, slightly softened
36-40 chocolate or vanilla wafers
Combine gelatin and orange juice in small saucepan. Bring to a boil.
Cook 2 minutes, stirring constantly. Beat ice cream in large mixing
bowl 1 minute. Slowly pour thin stream of gelatin mixture into ice
cream. Let stand in freezer until starts to get firm; 15-20 minutes.
Layer wafers and gelatin/ice cream mixture in Pyrex baking dish or
bowl. Place in freezer (can be kept in refrigerator, but dessert will
be more like a pudding). Take from freezer 15 minutes before serving.
Cut in serving portions and garnish with canned mandarin orange
segments, chocolate curls and fresh mint leaves, if desired. Serves
6-8.
