Baked Rigatoni
1 lb. rigatoni, cooked
1/2 yellow onion chopped
2 tbsp butter or margarine
3/4 lb. bulk sausage
1 28oz can chopped tomatoes
salt & pepper
8 oz sliced fresh mushrooms
1/2 cup Ricotta cheese
3 tbsp fresh basil, chopped
1/2 cup grated Parmesan cheese
Saute onion and mushrooms in butter in medium skillet for 3 minutes. Add sausage and
brown, draining fat, add tomatoes. Season to taste with salt & pepper. In large
bowl, combine rigatoni, sauce, ricotta cheese and basil. Toss until combined.Transfer to
prepared baking dish, sprinkle with cheese and cook at 400 degrees for 10 minutes.
