MOCK POTATO SOUP
1 head cauliflower
1 small onion
3 c. chicken broth
3 slices of thick bacon diced
3 T. butter
1/2 c. heavy cream
1 t. salt
1/2 t. pepper
Shredded cheddar cheese
Separated cauliflower florets from the stem, cut into small
pieces and
boil in the chicken broth until tender. Fry bacon and
onion in fry pan until bacon
is done. Put about 2 cups cauliflower
into food processor with a little of the
broth, added butter,
cream, and pulsed until creamy. Combine fried bacon and
onion with the
bacon grease and the pulsed cauliflower with
the rest of the whole
cauliflower. Put shredded cheese on top
in each bowl, microwave 1 1/2 min till cheese is
melted.
Salt and pepper to taste.
