Mediterranean Pasta
4-6 T olive oil
1 sm. onion chopped
2 T minced garlic
1/8 cup black or green olives
2 T capers, rinsed
1/2 red or green pepper diced
2-10 oz. cans diced tomatoes
3 T fresh chopped parsley
4 T fresh chopped basil
4 oz. sliced mushrooms
3-4 T balsamic vinegar
splash of white wine or sherry
2-3 T Worchester sauce
1/2 t dried oregano
salt and pepper to taste
2 bay leaves
cooked pasta of choice
Heat olive oil, add onions. Cook for 2 minutes add garlic, mushrooms and pepper.
Cook for 2-3 more minutes.
Add Vinegar, bay leaves, oregano and Worchester sauce, let it boil down
for a
few minutes.
Add the rest of the ingredients, except pasta.
This sauce should simmer for at least 15 minutes.
Serve over hot pasta and with parmesan cheese.
