Mediterranean Meatloaf
Olive Oil Spray
1 cup chopped onion, divided use
1 cup chopped carrot, divided use
1/2 cup chopped mushrooms
1/2 cup plain breadcrumbs
3/4 lb. ground turkey
1 egg white
12 pitted sliced Kalamata olives (or other black olive)
1/4 tsp. red pepper flakes
1/4 cup diced ham
1 cup canned, crushed tomatoes
salt and pepper to taste
Preheat oven to 450. Spray a
non-stick skillet with olive oil spray or use a sparing amount of
olive oil. Add onions and carrots and sauté over medium heat for 5
minutes. Remove half of
the onion and carrot mixture and set aside. Add mushrooms to the skillet
and cook for 2 minutes.
Mix the vegetables from the pan with the breadcrumbs, turkey and egg white.
Line a baking sheet with foil. Sake the turkey mixture into 2 loaves.
Bake 15 minutes.
Meanwhile, spray the same skillet with olive oil and put in the reserved
vegetables. Add olives,
pepper flakes, ham and tomatoes. Cover and cook for 5 minutes over medium
heat. Remove
from heat and add salt and pepper to taste. Remove the meatloaves from the
oven and serve
with the tomato mixture on top.
