Lollipops
2 cups granulated sugar
1 cup light corn syrup
1/2 teaspoon red or green food color
1-1/2 teaspoons peppermint extract
24 small wooden skewers
In medium saucepan, combine sugar, corn syrup, and 1/2 cup water. Cook
over
medium heat, without stirring, until candy thermometer registers 300
degrees, or until small amount of mixture forms hard, brittle threads
when
dropped into cold water. Remove from heat. Cool the mixture slightly.
Add
the food coloring and flavoring, blending well. Place 24 small wooden
skewers, 4 inches apart, on a lightly oiled cookie sheets. Drop candy
mixture from tip of tablespoon over skewers to form 2 to 3-inch
circles.
(If syrup hardens before all the lollipops are made, return the pan to
low
heat long enough to melt the syrup.) When lollipops have hardened,
place on
waxed paper to cool completely. Store in cool, dry place, not in
refrigerator.
