Lichee Salad
1 tbsp. lemon juice
1 avocado, peeled, pitted and sliced
1 can (11oz.) lichees
1 cup cooked baby shrimp or crabmeat
3 tbsp. chopped green onion
1/4 cup sour cream
1/4 cup mayonnaise
salt and pepper to taste
1/4 tsp. dry mustard
leaf lettuce
Pour lemon juice over avocado.
Drain lichees and add to avocado
with shrimp and green onion. In a separate bowl blend sour cream,
mayonnaise, salt pepper and mustard. Gently blend shrimp mixture
into sour cream mixture. Cover 4 salad plates with leaf lettuce and
divide the shrimp mixture evenly among the plates.
