LEMON PARFAIT PIE WITH MACADAMIA
NUT CRUST
A delicious refreshing delectable pie, that you will really enjoy!
Macadamia nut crust:
1 cup flour
1/2 cup butter
2 tablespoons confectioners' sugar
1/2 cup finely chopped macadamia nuts
Sift together flour and sugar; cut in butter until particles are fine. Stir in
the nuts. Chill for 30 minutes.
Pour into a 9-inch pie pan; press out to forma a crust. Bake in a preheated 425
degree oven for 8-10
minutes or until lightly browned. Cool on a rack
Filling:
2 pkg. 3-oz. lemon flavored gelatin
2 cups boiling water
1 teaspoon grated lemon rind
1 tablespoon fresh lemon juice
1 quart vanilla ice cream
1 cup heavy cream whipped
1/4 cup toasted coarsely chopped macadamia nuts
Dissolve gelatin in boiling water. Stir in lemon rind and lemon juice. Add the
ice cream by spoonfuls,
stirring until melted. Chill till mixture mounds slightly when spooned. Pour
into cold pastry shell.
Refrigerate and chill until firm. When ready to serve top pie with whipped cream
and toasted macadamia
nuts. Serves 6-8. Do try, delicious!
