Kentucky Brown Casserole
2 tbsp butter
4 tbsp flour
2 c milk
1/2 tsp chicken bouillon
1/2 c shredded sharp cheddar cheese
4 slices bread, toasted
6 oz cooked turkey breast meat, thinly sliced
6 oz cooked ham, thinly sliced
1 tomato, sliced
4 slices bacon, cooked until crisp
2 tsp Parmesan cheese, grated (use good stuff)
Paprika
Preheat oven to 300 degrees. Melt butter in skillet. Stir in flour.
Gradually add milk and bouillon; cook until thickened. Add cheese. Stir
until cheese is melted; remove from heat. Put toast in flat baking
dish. Put turkey and ham on toast. Spoon cheese sauce
over meat. Bake 10 minutes.
Top with bacon and tomato slices; bake 5 minutes more.
Sprinkle with
Parmesan and paprika before serving.
MOM!MOM! notes: The original
recipe calls for only turkey, but hey make in any way you
want. Also I think you can experiment with the cheese in the sauce a
little. I have used several
types, including Colby and Velveeta (my kids like that). This has quite a
bit of versatility.
Great way to use leftover ham, turkey or chicken. Also the original recipe
calls for
chopped fresh parsley on top as a garnish rather than paprika. It is fine
either way.
I also find draining the tomatoes on a paper towel first is preferable.
