Garlic and Cantal Soup
8 garlic cloves
1/4 cup olive oil
3 cups beef stock
3 cups chicken stock
4 thick French bread slices
4 thick slices of Cantal cheese (or Gruyere)
Thinly slice 7 garlic cloves.
Heat oil in a heavy, large saucepan over medium heat.
Add garlic
slices and cook until light brown, about 2 minutes. Add both stocks and
simmer for 10 minutes.
Pre-heat broiler. Cut remaining garlic clove in half. Rub garlic
over both sides
of the bread slices.
Place bread on cookie sheets and toast on both sides with
the broiler.
Ladle soup into broiler proof bowls. Float toast in each bowl and top
with
cheese. Broil until cheese bubbles and serve immediately.
