This is an old southern tradition and is
great with fried chicken. You can try it with ripe tomatoes
also.
Fried Green Tomatoes
1 large egg
1/4 cup milk
1/2 tsp Wildtree
Cajun Seasoning
1 tsp sugar
1/2 tsp salt
1/4 tsp pepper
1/2 cup cornmeal
5 medium size green tomatoes, sliced
2 tbsp bacon flavored
grapeseed oil or bacon drippings
In a pie plate, whisk the egg, milk and
cajun seasoning. In a cup mix the sugar, salt and pepper.
Spread the cornmeal on a plate. Dip the tomato slices into the egg mixture, sprinkle with the
sugar mixture and then coat with cornmeal.
In a non-stick skillet, heat 1 tbsp of oil
over medium heat. Slide in about half of the tomato slices and
cook for about 2 minutes on each side, until brown. Do not crowd. Put on paper
towels to drain.
Repeat until all the tomatoes are done.
Serve these immediately since they will lose
their crispiness quickly.
