Fluffy Pineapple Dessert Squares
Crust:
1 1/2 cups graham cracker crumbs
1/4 cup melted butter
2 Tab. sugar
Filling:
1 large tin evaporated milk
1 pkg. (3oz) lemon flavored gelatin
1 cup boiling water
1 pkg. (8oz) cream cheese- softened
1/2 cup sugar
1 tin (8oz) crushed pineapple
1 cup walnuts - chopped
Combine graham crumbs, butter and sugar and press into the
bottom of a 9 X 13
baking pan. Bake 325 for 10 minutes. Let cool.
Pour the milk into a metal mixing bowl. Chill for at least 2 hours.
Dissolve the gelatin in the boiling water and chill until syrupy (about 1 1/2
hours).
Beat chilled milk until it forms stiff peaks.
Beat softened cream cheese and sugar together until smooth. Add gelatin
and mix
thoroughly. Stir in pineapple and walnuts. Gently fold in the whipped
milk. Pour mixture
over the crust.
Chill for at least 3 hours or overnight.
Cut into 12 squares to serve.
A light and yummy end to any meal!!
