Enchilada Rice and Beef

1 pouch Uncle Ben's Ready Rice Spanish style
3/4 lb. ground beef
1 14.5 oz. can of diced tomatoes (sometimes we use Ro-Tel), drained
1 15 oz. can of Cheddar or Nacho Cheese Soup
1 4 oz, can of sliced black olives.

Heat Ready Rice in microwave, according to directions (about 90 seconds).
Cook ground beef in skillet.  Add tomatoes, soup and olives and stir to
combine well.  Add rice, heat through and serve immediately.

MOM!MOM! notes:  This can be doubled easily.  I prefer to use Campbell's
soup, but use any kind you like.  Everyone loves this and it is way too easy.
It goes well served with some green beans or a crispy salad.  Warm
wheat tortillas are nice on the side.
