EGGS BAKED IN SPINACH AND KIELBASA
8 eggs
2 bunches spinach, chopped, cooked and drained
1/4 cup finely chopped onion
1 lb. Kielbasa sausage, cut in 1/2-inch cubes
3 tablespoons butter
1/2 teaspoon salt
Freshly ground black pepper
2 cups salsa
1/2 cup sharp cheddar cheese

In sauté pan, melt butter and sauté onion and sausage. Add spinach,
salt and
pepper. Spoon into a 9"x13" buttered baking dish. Make eight
indentations and break an egg into each indentation. Spoon salsa over
spinach, leaving
egg yolk uncovered. Sprinkle the cheese in the same manner. Bake in a
preheated 350 degree oven for 20 to 25 minutes or until hot and bubbly.
Serves four with 2 eggs.

This is a wonderful recipe, tasty and delicious, for entertaining at a
brunch.
Recipe can easily be made in large baking trays for a crowd. I usually
accompany this with a large platter of fresh fruit and hot crusty
rolls.
