This is an easy side dish that
goes great with steak.
Egg and Potato Skillet
1 tbsp. butter
1 med. Onion, thinly sliced
4 large potatoes, thinly sliced
6 eggs
2 tbsp. water
salt
pepper
In a large skillet sauté onion in butter until they begin to
soften. Add potatoes and cook on med-low heat until soft but not mushy.
Stir
frequently to ensure that all potatoes cook evenly. Beat eggs, water,
salt
and pepper in a bowl with a fork or whisk. When potatoes are just about
done, pour egg mixture over potato mixture. Continue to cook on medium
heat
stirring constantly until scrambled eggs are set. You may want to add
salt
or pepper to taste. Serve with ketchup. (4 servings)
