Dreamsicle Mousse
2 (3oz) packages orange-flavored Jell-O
1 (20 oz) can crushed pineapple in its own juice
3/4 cup pineapple juice
1/2 cup orange soda
2 tbsp. fresh squeezed orange juice
2 tbsp. grated orange peel
3 cups chilled whipping cream
2 tsp. vanilla
2 tsp. Gran Marnier
Place gelatin in large bowl. Drain pineapple through a sieve, capturing
juices in cup. Add enough pineapple juice to equal 1 1/2 cups in total.
Transfer to a small saucepan and bring to a boil. Pour boiling
pineapple
juice over Jell-O, stirring until Jell-O is dissolved. Mix in drained
pineapple, orange pop, orange juice, orange zest and Gran Marnier.
Refrigerate for 1 hour.
Beat cream and vanilla in large bowl until stiff peaks form. Fold into
Jell-O
mixture. Transfer to serving dish (such as trifle dish), cover and
refrigerate for at least 4 hours. Serve cold.
