Dill Mustard Meatloaf
1 cup beef broth
1/2 cup oatmeal
1 1/4 lb. meatloaf mix (beef, veal, pork combos available in most grocery
stores)
1/2 cup onion, minced
1 egg
3 tbsp. fresh dill, chopped
2 tbsp. Dijon mustard
1/2 tsp. salt
1/2 tsp. pepper
Preheat oven to 450. Mix 1/2 cup broth and oatmeal in a medium bowl.
Let stand 5 minutes.
Mix in meat, onion, egg, dill, mustard, salt and pepper. Transfer mixture
to a rimmed baking sheet and shape into 2 rectangular loaves.
Bake meat loaves until browned and cooked through about 25 minutes.
Transfer loaves to a platter and place the baking sheet on top of 2 burners. Add
remaining 1/2 cup of broth to sheet. Boil pan juices until they reduce by
half, about 2 minutes. Pour sauce over loaves and serve.
